In the Middle Ages, saffron was highly valued and used in many dishes. In fact, it was so valuable that it was valued at times higher than gold. Spain also started growing saffron after the Roman Empire was, defeated. Then, hundreds of years later, saffron spread to the Arab world. The Arabs who are, known for their contributions to medicine, were also the first to explore saffron’s medicinal value. They used it to treat male sexual dysfunction and to manage human hormone imbalances, as well as cooking with it.

Saffron is, mostly grown in Iran, Spain, India, and Afghanistan. However, there is a small production in Vermont.
